Basil Lime Ginger Avocado Soup


Basil Lime Ginger Creamy Avocado Soup

Raw Food Basil Lime Ginger Creamy Avocado Soup


Soup

1 lime juiced
1 kaffir lime leave (optional)
3 cups  young coconut water ( or 1.5 cups young coconut water and 1.5 cups filtered water)
1 inch knob ginger
2 teaspoons chickpea miso
1/8 teaspoon cayenne or ground chili flakes
1 tiny little piece of a red chili pepper (optional)
1 small handful of basil leaves
1 large avocado or 2 small

Suggested Garnishes

chopped chives, cherry tomatoes, cucumbers, bell peppers, and your choice of seaweed.
Blend all the soup ingredients together in a blender until completely smooth. Taste and adjust seasonings if necessary. Garnish with chopped chives, cucumbers, bell peppers that have been cut with a mandoline slicer* and your choice of seaweed. I like crumbled silky sea palm on top.

"RAW" in Los Angeles

I had a dish called "CHEESY KELP" which is so much like Fettuccine Alfredo it was amazing and I want to know how they did this! It was so incredibly tasty, even the vegetables and the salad had flavors out of this world. I would highly recommend anyone trying RAW food for the first time to go to "RAW"on 6th Street in Santa Monica, you will not be disappointed! "RAW" the restaurant is definitely not the bland alfalfa tasting testers one might expect from a healthy eating place such as this one, it's more like a scrumptious retreat you can't wait to go back to so you can have the dishes you've been craving since your first visit....like me!

Juicing

Juicing is an excellent way to make nutrients from vegetables more accessible.  Juicing traumatizes the vegetable's cell wall enough to release the nutrients but not so much that you're destroying the whole enzymatic protein structure. Whenever you juice a vegetable, you're traumatizing it's cell walls without destroying the enzymes because you're not heating it. In a good quality juicer such a vita mix or a blend tech, the juicing process doesn't seem to destroy the enzymes at all.
Once you've blended the veggies you should drink the juice right away because as soon as it's blended it releases the enzymes from the cellulose, the juice comes into contact with oxygen in the air and the oxidation process begins, chemically changing the juice and neutralizing certain vitamins.
