Saturday's RAW Cooking Class with Chef's Mia Dalene & David Hempseed

These were amazing tasting with some spice in the wrap which I love!


Not only do they taste good...they LOOK good!

Oooh! Now Chef Mia is chopping baby bok choy to put into her latest Chop Suey recipe.



Mmmm..... Looks good!  But wait!  She's not done!


She wrapped it in a sheet of Nori (dried seaweed).


Another great recipe! It's light, fresh and crispy. Perfect on a hot Summer day... :)

Chef David Hempseed is showing and telling us the easiest way to get a mature coconut and a young coconut opened. In my experience....  not an easy task!


Here's the young coconut.... He says to take the knife to the top of the young coconut, where the point is and start on one side using a cutting motion and follow with your knife completely around, then put the young coconut on the chopping board and apply pressure to where you just cut and, pop! It comes right off. He makes it look easy but we'll have to try this at home! ;)



My favorite part!!! Chef Mia is making her wrap for the Chocolate Sushi!!! I can't wait to try this one!


OMG!!! It relly is as good as it looks. The outside is made from nuts, coconut and cacao. The inside is sliced strawberries and mango. The chocolate sauce ...well... I believe one of her specialties are her chocolate sauces, YUM!..  and that's all I have to say about that!

Keep it simple! That's what I still do to stay with it.

You may have to add a few small appliances and ingredients to your kitchen at first, as you did when you first got your own place and had to stock the kitchen. High speed blender, food processor, dehydrator....but you don't NEED these things to get started, you'll just be a little more limited. Just something to keep in mind :)

Salads, smoothies and RAW bars, green bars are great and they don't take a lot of time. Keep nuts you like on hand and drink lots of water all day long, you will notice how much less your body actually needs when you're eating pure food and drinking lots of water.

A fast breakfast for me before the gym is a half an avocado, some RAW honey and RAW almond butter with it. RAW honey and almond butter is easy to find and you can find them already jarred.
Lunch- you can make a big salad with whatever you like in it. I make my own dressing with olive oil, lemon and either Braggs liquid aminos (it's a soy sauce substitute) or Nama unfiltered shoyu. Braggs is cheaper. If you want to beef up your salad, I like putting a portabello mushroom cut up into it.
Smoothies - you can make smoothies anytime, morning, afternoon and night. I make them with almonds (soak them for at least 4 hours) some water, agave nector and any fruits you want. I like to add ice because I like it much better frothy even though some RAW foodists say that most everything should be at room temperature :-(
You can also get supplements: Amazing Grass's Amazing Meal and/or green drink in chocolate flavor is AWESOME. I just mix it with water and drink for a quick fix. Green bars are really good and RAW and they are chocolate covered...tastes like chocolate covered raisins...REALLY!

I will tell you this ... if you're gonna go for it and really try it, you should get a vitamix or some other high powered blender. It can blend things like nuts for your milks and smoothies and give you much more choices than just RAW veggies and nuts and salads. This will run you around $300 but it is SO worth it!

It may seem overwhelming at first because it's not your norm and you're going to crave things mostly because you're used to having them. If you just hold strong for the first couple of days or so (preferably ten), you'll start to feel a difference.

You don't have to starve yourself or deprive yourself, do as much as you can and it will be an improvement.
